THE JAFFA: Chef Omri Rafael to Lead Culinary Operations at the Hotel
THE JAFFA hotel, part of the luxury collection of the Fattal hotel chain, FATTAL LIMITED EDITION, is expanding its culinary operations under the leadership of Chef Omri Rafael, one of the prominent names in the new generation of Israeli cuisine.
In his role as the hotel's chef, Rafael will lead the culinary direction for breakfasts, Friday night dinners, the pool area snack bar, and Golda Restaurant—the hotel's kosher Italian restaurant—with an emphasis on high-quality ingredients and high culinary standards.
Golda Restaurant and its Menu: This is a new Italian restaurant offering a menu based on fresh ingredients, featuring handmade pastas produced on-site, fish dishes, and pizzas.
Among the dishes on the menu: Sea fish carpaccio with oregano salsa, blanched tomatoes, capers, crème fraîche, and toasted brioche; fresh corn tempura balls filled with cheddar cheese and habanero koshu cream; classic pastas including Cacio e Pepe and Arrabbiata; Fish Fillet Meunière with brown butter, fennel sofrito, capers, and lemon wedges; Crispy Fish in a brioche bun with tartar sauce and cheddar cheese.
Chef Omri Rafael: Brings with him years of experience in fine dining and leading culinary institutions, including the Milgo & Milbar restaurant, the Six Senses Shaharut hotel, and the La Shuk group, alongside professional internships in Michelin-starred restaurants around the world. His culinary philosophy is based on combining the precision, quality, and standards practiced in chef restaurants with the world of hospitality, aiming to set a new bar for kosher culinary excellence.
Concurrently and as recently published: During the month of October, a new kosher meat chef restaurant is expected to open in the hotel courtyard under the leadership of Chef Amos Hayon, who also leads the 26.8 wine bar at the Canaan Hotel from the FATTAL LIMITED EDITION collection. The new restaurant will offer contemporary Israeli-Jaffa cuisine and will join THE JAFFA's renewing culinary lineup.
